Kajjikayalu
Kajjikayalu is a traditional Telugu sweet prepared by stuffing a crisp outer shell with a flavorful mixture of coconut, roasted lentils, and peanuts, then deep-frying to achieve a golden, crunchy texture. It is commonly made during festivals and special occasions, reflecting rich culinary heritage. The filling provides a combination of healthy fats, protein, and essential nutrients, contributing to sustained energy. For an improved nutritional profile, refined sugar or Jaggery in the filling are substituted with Fructo-Oligo-Saccharides (FOS) and Maltitol, which impart sweetness with lower caloric content.
